Adrian Richardson Thai Chicken Curry

Chef owner of La Luna Bistro, Melbourne and well known for his appearances on Good Chef Bad Chef, Adrian Richardson joined us in-store last week to cook up a storm using the New Magimix Cook Expert. Showing us how this all-in-one machine can whip up anything from salad dressings to steamed puddings, Adrian educated and entertained our guests with his humour and how he adapts recipes like this Thai Chicken Curry to his family & lifestyle.

Thai Chicken Curry

Ingredients

  • 1 large knob Ginger
  • 5 cloves Garlic, peeled
  • 1 stem Lemongrass
  • 3 long red Chili
  • 3 tab extra virgin olive oil
  • 4 Shallot, peeled
  • 1 bunch Thai basil
  • 1 bunch fresh Coriander, washed

Puree in the cook expert then sweat

Add

  • 300 ml Coconut milk
  • 2 tab Fish sauce
  • 200 ml Stock
  • 2 tab coconut sugar
  • 2 Kaffir lime leaves

Simmer

Add

  • 2 chicken breasts, skin off, diced – tongs
  • 1⁄2 bunch Fresh coriander leaves
  • The juice of 2 Limes
  • Season

Simmer 2 to 3 minutes until chicken is cooked

Garnish with; Spring onion, Fried shallot, Coconut cream

Steamed coconut rice to serve (using a rice cooker)

  • 200 grams jasmine rice
  • 2 kaffir lime leaves
  • 300 mls coconut milk
  • 2 tabs toasted desiccated coconut
