Mango and Passionfruit Granita
Serves 4

INGREDIENTS:
• 2 large mangoes
• 8 passionfruit
• 2 cups sparkling water
• 2-3 tbs Soda Press Co Old Fashioned Lemonade syrup
• 120ml vodka

METHOD:
1. To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre Bottle to the line with cold water and carbonate.
2. Cut all flesh from mangoes, discarding the skin and pit and blend in a food processor until smooth and transfer to a mixing bowl.
3. Add in the flesh of the passionfruit, the sparkling water and the syrup and mix well, then spread evenly on a baking tray.
4. Freeze the granita mixture for a minimum of four hours or overnight.
5. To serve, soften the granita by leaving the tray on the bench for ten minutes, and then scrape it with a fork.
6. Divide granita between four glasses, serve with a shot of vodka poured over the top, and enjoy with a spoon.

SERVES 4-6 GLASSES

EQUIPMENT
Magimix Cook Expert

INGREDIENTS
300 g ice cubes
4 tbsp golden caster sugar
1 tbsp mint syrup
75 ml lime juice
4 g bunch mint
500 sparkling water 

METHOD
1 Put the ice cubes into the metal bowl and run the CRUSH programme. Press STOP
when the ice is crushed.
2 Add the sugar, mint syrup and lime. Restart the CRUSH programme.
3 Pour the virgin mojito into tall glasses, decorate with the mint leaves and fill with
sparkling water. Serve immediately.
