With plenty of hot summer days coming our way, we thought we’d up the ante and get Tenina Holder to help us whip up some delicious homemade ice cream. So, pick up a punnet or two, it’s time to get churning!

Once you master the vanilla base, you can start to get creative and add anything in the form of flavour. But to kick things off, we’ve added our two favourite summer recipes: Balsamic Strawberry and Cherry Garcia – enjoy!

BALSAMIC STRAWBERRY

Equipment

Ingredients

  • 400ml tin of condensed milk
  • 1 tbsp Heilala vanilla bean paste
  • 600ml carton of whipping cream
  • 3 tbsp extra virgin olive oil
  • 1 punnet of strawberries
  • Drizzle of balsamic vinegar

Instructions

  1. Roast 1 punnet of strawberries drizzled with balsamic vinegar in a 200°C oven for 20 minutes.
  2. Drain liquid and cool completely.
  3. Place condensed milk, vanilla bean paste, whipping cream, and olive oil into a mixing bowl.
  4. Whisk together with a balloon whisk until well combined. Then pour mixture into your ice cream machine.
  5. Start churning, adding in the strawberries midway through. Stop once desired consistency is achieved.
  6. Pour mixture into Tovolo containers and freeze until ready to serve.

CHERRY GARCIA

Equipment

Ingredients

  • 400ml tin of condensed milk
  • 1 tbsp Heilala vanilla bean paste
  • 600ml carton whipping cream
  • 3 tbsp extra virgin olive oil
  • 1 tsp almond extract
  • 200g cooked pitted cherries (or frozen cherries)
  • 100g Ice Magic, chopped

Instructions

  1. To cook cherries, pit them and place them into a small saucepan with a good splash of Amaretto.
  2. Simmer for at least 10 minutes until the cherries are soft and the syrup is sticky. Cool completely.
  3. Place condensed milk, vanilla bean paste, whipping cream, olive oil, and almond extract into a mixing bowl.
  4. Whisk together with a balloon whisk until well combined. Then pour mixture into your ice cream machine.
  5. Start churning until desired consistency is achieved. Add in cooked cherries, or frozen cherries, and 100g of Ice Magic at the end of churning.
  6. Pour mixture into Tovolo containers and freeze until ready to serve.
