Easy, 20 minutes, Serves 8

This is a very easy and simple carrot and walnut cake to make, yet it’s still moist, light and delicious.

Ingredients Cake

  • 2 cups self-raising flour, sifted
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1 cup brown sugar
  • 2 cups grated carrot
  • 1 cup chopped walnuts
  • 1 cup vegetable oil
  • 3 large eggs

Ingredients Frosting

  • 125g cream cheese, softened
  • 2 tsp lemon rind
  • 2/3 cup icing sugar

Instructions Cake

  1. Preheat oven to 160C
  2. Grease and line cake pan with baking paper
  3. Sift flour, mixed spice and cinnamon into a bowl
  4. Beat sugar,oil and eggs until creamy. Add sifted flour mixture and continue beating until well combined
  5. Fold in carrots and chopped walnuts
  6. Place mixture into the prepared cake pan and bake for 1 hour

Instructions Frosting

  1. Using an electric mixer beat cream cheese and lemon rind, until smooth.
  2. Gradually beat in icing sugar until smooth and creamy
