We ask 10 outstanding food bloggers to share recipes they learnt from the significant mother in their lives. To celebrate Mother’s Day this year, Kristy K of Queen of Bad Timing shares the first dessert her Mum taught her to bake. “Something that never fails, always impresses and was so easy to make (while licking chocolate off my grubby chubby fingers)”

Equipment

Ingredients:

  • 200g dark chocolate
  • 20g butter
  • 3 eggs, yolks & whites separated
  • 1 tablespoon of caster sugar
  • 1 1/4 cup thickened cream
  • 1/2 teaspoon vanilla extract

Directions:

  1. In a double boiler melt 200g dark chocolate and 20g butter until combined.
  2. Mix in 3 egg yolks then set aside in the bowl
  3. Whip 3 egg whites with 1 tablespoon of caster sugar until stiff peaks form, then fold into chocolate mixture
  4. Whip 1 and 1/4 cup thickened cream with 1/2 teaspoon vanilla extract until soft peaks form, then fold into mixture
  5. Put into 4 cups or ramekins and set until firm
  6. Serve with a plate of fresh fruits, chocolate bites, honeycomb etc so everyone can mix and match their toppings as they wish
