The thing I love most about Trifle is that you can literally put whatever you like in it and it will still be delicious.

This one is made with a white chocolate mousse, pomegranate jelly, cherries & strawberries and sponge fingers, but you could easily mix things up! Feel free to trade out the white chocolate for milk or dark chocolate, fold through candied citrus rind or freeze dried berries. Don’t like cherries or pomegranate? Simply replace them! It you are gluten intolerant, try making a hazelnut dacquoise in place of the sponge fingers. The world is your oyster (just don’t put any in the trifle!)

Ingredients

  • White chocolate and coconut mousse
  • 200g Cherries – freshly pitted or frozen
  • 1 punnet strawberries, halved
  • Pomegranate jelly
  • Chocolate chantilly cream
  • 20 x Sponge fingers
  • 100ml Pedro Ximenez Sherry (or any sweet alcohol of your choice)

Method

For the jelly layer
  1. Heat up the pomegranate juice. Bloom the gelatine – immerse in cold water for 2-4 minutes or until completely softened. Squeeze out the excess liquid and add to the hot juice. Remove from the heat and allow to cool completely before transferring to the fridge to set slightly (30 minutes).
  2. Lay the half sponge fingers in a single layer at the base of the trifle bowl and pour over the half the PX sherry to soak.
 
For the mousse
  1. To assemble. Top the sponge fingers with half the mousse and level out with a spatula (or a good shake to the trifle bowl). Set in the freezer for 20 minutes.
  2. Spoon over all of the jelly and top with the pitted cherries (you can also use frozen cherries here). Set in the freezer for another 20 minutes.
  3. Top the jelly with the rest of the sponge fingers and PX sherry.
  4. Arrange halved strawberries, cut side out, around the side of the bowl.
  5. Pour over the rest of the mousse and set for another 20 minutes (or overnight if you’re making this a day in advance).
 
For the chocolate chantilly
  1. Finish the trifle with fresh cherries, strawberries, flowers, herbs or shaved chocolate – anything you’d like!
