With the addition of the sweet & juicy apple you will highly recommend this recipe to everyone and anyone! An adopted recipe from the beloved Vitamix Recipe book.

Makes 8-10 Pancakes

Ingredients

  • 1 cup plain flour
  • 3 teaspoons baking powder
  • 1/2 tsp salt
  • 3 Tbsp sugar
  • 1/4 tsp nutmeg
  • 1/2 tsp bicarbonate of soda
  • 1 egg
  • 1 ½  tsp butter
  • 1/4 tsp vanilla essence
  • 1 cup milk
  • 1/2 medium apple

Instructions

  1. Heat Pan to roughly 180 degrees. Mix together all dry ingredients in medium-sized mixing bowl. Set aside.
  2. Place egg, butter, vanilla essence, milk and apple into blender.
  3. If using Vitamix, select Variable 1 and then quickly increase to high for 30 seconds.
  4. Pour wet mixture into dry mixture and blend by hand until incorporated.
  5. Let batter sit for 5-10 minutes to yield best cooking and flavour.
  6. Once pan is hot enough, grease with butter and remove excess. Pour batches of pancake batter (about 1/2 cup) in pools with enough space from another.
  7. Once pancakes have bubbles on top and are slightly dry around edges, flip over. Cook until golden on bottom.
  8. Repeat with remaining batter.
  9. Serve with your desired topping.
