Makes 8-10 Pancakes
Ingredients
- 1 cup plain flour
- 3 teaspoons baking powder
- 1/2 tsp salt
- 3 Tbsp sugar
- 1/4 tsp nutmeg
- 1/2 tsp bicarbonate of soda
- 1 egg
- 1 ½ tsp butter
- 1/4 tsp vanilla essence
- 1 cup milk
- 1/2 medium apple
Instructions
- Heat Pan to roughly 180 degrees. Mix together all dry ingredients in medium-sized mixing bowl. Set aside.
- Place egg, butter, vanilla essence, milk and apple into blender.
- If using Vitamix, select Variable 1 and then quickly increase to high for 30 seconds.
- Pour wet mixture into dry mixture and blend by hand until incorporated.
- Let batter sit for 5-10 minutes to yield best cooking and flavour.
- Once pan is hot enough, grease with butter and remove excess. Pour batches of pancake batter (about 1/2 cup) in pools with enough space from another.
- Once pancakes have bubbles on top and are slightly dry around edges, flip over. Cook until golden on bottom.
- Repeat with remaining batter.
- Serve with your desired topping.
