A simply stunning and impressive dessert, that tastes amazing!

Ingredients:

  • 250g chocolate
  • 250ml cream
  • 2 egg yolks
  • 30g sugar
  • FOR PRALINE
  • 100g peanuts
  • 100g pistachios
  • 200g sugar
  • FOR ICE-CREAM (makes 1lt)
  • 12 egg yolks
  • 200g sugar
  • 500ml cream
  • 500ml milk
  • 1tsp vanilla

Instructions:

FOR MOUSSE

Whip cream to a soft peak. Melt chocolate. Whip eggs and add sugar. Beat until fluffy. Add Chocolate and cream bit by bit until incorporated. Set in glass bowl.

FOR PRALINE

Melt sugar until light golden. Add nuts and set in greased tray until cool. Crack hard then smash to desired size. Store in freezer.

FOR ICE-CREAM

Warm cream and milk in saucepan. Whisk eggs, vanilla and sugar. Add warm liquid to egg mix. Put back on stove to cook on low till thick and creamy. Cook and churn in an ice-cream machine. Fold Praline at the end and freeze for a further hour before serving.
