Easy, 40mins, Serves 12

  • 125g Butter
  • 1/2cup Brown Sugar
  • 1/4cup Golden Syrup
  • 2 eggs
  • 2cups Self Raising Flour
  • 1/4TBS Baking Soda
  • 2/3cup Buttermilk
  • 1TBS Ground Ginger
  • 1Tsp Cinnamon
  • 1Tsp Nutmeg


  1. Pre Heat Oven to 175C
  2. Beat Butter, Sugar and Golden Syrup until light and fluffy.
  3. Add Eggs 1 at a time, beat well after each addition.
  4. Sift in Flour, Baking Soda and Spices into creamed mixture.
  5. Mix through Buttermilk.
  6. Drop level tablespoons onto lined baking tray 5cms apart, cook 10-15 mins until risen and golden.
  7. Allow to completely cool and fill with sweetened whipped cream, drizzle with dark chocolate if desired.
