Up for a new burger recipe? Put a tasty spin on the usual greasy hamburger. Start with a slice of juicy grilled pineapple then finish with a lightly seasoned chicken breast grilled to perfection. It’s fairly simple to make, requires little ingredients, and serves up to two.

Perfect for Summer entertaining or even your everyday lunch, this recipe offers a great flavour combination and is also super healthy. Both kids and adults are sure to love every bite of this juicy grilled chicken burger.

Ingredients

  • Vegetable oil
  • 1 chicken breast
  • Salt and pepper, to season
  • 2 bread rolls
  • 1 cup lettuce
  • 1 large tomato
  • 2 large slices of beetroot
  • Mayonnaise
  • 2 pineapple rings

Instructions

  1. Slightly grease griddle pan or BBQ grill. Turn on high heat to preheat the pan or grill.
  2. Flatten chicken breasts evenly and spray with oil. Sear for 5 minutes on each side until golden brown.
  3. While chicken is cooking, cut the bread rolls in half and toast the inner side of each roll under the grill.
  4. If chicken is cooked, take off heat and slice in half, on an angle.
  5. Get the rolls and layer each with lettuce, tomato, beetroot, chicken, mayo and pineapple. Top with another roll then serve.
