Easy, 20mins, Serves 8
This Hot Cross Brioche with Cinnamon and Orange glaze freshly baked and served warm is one of life’s delights. Like many good things, this recipe takes time to make – but it’s worth waiting for!
Ingredients:
- 1 x 500g Lighthouse brioche bread mix sachet
- 3 tbsp softened butter
- 5 tbsp warm milk
- 3 tbsp eggs, lightly beaten
- 2 tsp dried yeast
- 1/3 cup mixed fruits
- 1/2 cup plain flour
- 1/3 cup water
- FOR GLAZE
- 1/3 cup caster cugar
- 3 tbsp water
- 1 tbsp orange juice
- 1 tbsp honey
- 1 cinnamon stick
Instructions:
- Lightly grease a 22cm Springform Pan. Combine softened butter, milk and egg in a large mixing bowl. Sprinkle Lighthouse Brioche Bread Mix into the mixture, add yeast and mix together to form a soft dough.
- Knead the dough on a lightly floured surface for approx.10 minutes until a smooth ball form. Place the dough in a greased bowl and cover and stand in a warm place until doubled in size (45 minutes to 1 hour).
- Turn dough onto a lightly floured surface and add mixed fruits, knead slightly until smooth. Divide into 8 even portions, shape each portion into a ball. Place one ball in the middle of the pan, arrange the rest of the balls around it, about 1cm apart. Cover and stand in a warm place for 45 minutes to 1 hour or until buns double in size.
