Why Make Your Own Almond Milk?

Food technology has evolved ever since. Thanks to years of research, we can acquire almost any food easily and with a longer shelf life. However, the price we have to pay for convenience is its nutritional value. Nowadays, to make things cheaper, many of the almond milk we get from our local groceries have a lot of artificial flavourings, stabilisers, emulsifiers, and other additives to make mass production cheaper.

We are conditioned to believe that almond milk should be thicker than it should be. This is because companies add thickeners to mimic real milk. Almond milk or any nut milk is not thick. Other things that manufacturers add are stabilisers and emulsifiers. This is to prevent the water from separating. They try their best to mimic real milk. We are made to believe that when the product separates, it has already gone bad. But separation is a natural occurrence.

By making your own almond milk or any nut milk, you have full control over the ingredients. There will be no additives, artificial colours, and whatnot. You will also fully enjoy the full health benefits of almond milk since, unlike mass-produced almond milk, it has more almonds than other ingredients that only mimic the flavour of almonds.

Ingredients

  • 2 to 3 cups water (for soaking the nuts)
  • 3 cups water (for blending)
  • 1 cup almonds, raw
  • Sugar or sweetener, to taste (optional)

Instructions

  1. Soak the nuts in 2-3 cups water overnight.
  2. Drain nuts from water. Add ingredients to Vitamix container in order listed. Secure lid
  3. Start on Variable 1 or low, slowly increasing to variable 10, then to high.
  4. Blend for 45 seconds, or until almost smooth.
  5. Strain excess sediment from nut mixture using a nut milk bag, muslin cloth or filtration bag. Twist the top to squeeze out milk or use a spatula to encourage it to pass through more rapidly.
  6. Refrigerate. The milk will keep in the refrigerator for 3-4 days. Shake well before use.
