Try this Marmalade and Mustard Glazed Ham to crown your festive feast. The perfect attraction for the main event.



  • 1 ½ cups orange marmalade
  • ¼ cup Dijon mustard
  • ½ cup of orange juice (swap for bourbon or whiskey if preferred)
  • 1 pinch of salt
  • 1 ham leg
  • Cloves, to decorate
  • Fresh herb sprigs to serve


  1. Preheat the oven to 200°C.
  2. Place the marmalade, mustard, orange juice and salt in a saucepan, stir to combine. Heat on high for approximately 5 minutes. Reduce heat to a simmer for 5 minutes and set aside.
  3. Remove skin from the ham and trim any excess fat left behind.
  4. Score a classic diamond pattern into the top of the ham leg. Place the ham on a wire rack in a large roasting pan.
  5. Push a whole clove into the centre of each diamond and brush glaze over the ham. Cover the shank with foil before putting the ham in the oven.
  6. Roast the ham in the oven for 40 to 45 minutes, basting with the glaze every 15 minutes during this time.
  7. Remove the ham from the oven.
  8. For a festive touch, cover the exposed shank by decorating it. Wrap it in baking paper and a strip of white linen, then tie some fresh sprigs of herbs on top with string.
  9. Carve the ham into thin slices and serve hot or cold.
