Italian Sausage, Pork Sausage and Chicken Sausage Recipes from Mad Millie

Italian Sausage

Ingredients

  • 520g lean pork
  • 280g lean beef
  • 200 soft sinew free fat (pork fat works well)
  • 2 tsp of salt
  • ½ tsp ground pepper
  • 1 tsp mixed herbs
  • 1 tsp ground fennel seeds
  • ½ tsp dried chilli flakes

 

Pork, Beef & Sundried Tomato Sausage

Ingredients

  • 520g lean pork
  • 280g lean beef
  • 200g soft sinew free fat (pork fat works well)
  • 2 tsp salt
  • ½ tsp ground pepper
  • 1 tsp mixed herbs
  • ½ cup finely chopped sun-dried tomatoes (drained)

 

Low Fat Chicken & Herb Sausage

Ingredients

  • 1 kg minced chicken (use boneless, skinless thighs)
  • 2 Tbsp olive oil
  • 1 tsp mixed herbs
  • 2 tsp salt
  • ½  tsp ground pepper
