When it comes to stress-free entertaining, the trick is to not sweat the small stuff when feeding guests. I’ve put together some wonderful suggestions for spring recipes to help you along.

It’s always a good idea to have a few go-to spring recipes up your sleeve that you can knock out of the ballpark without hours of prep and slaving away in the kitchen while your guests are left sitting alone at the table.

Speaking of tables, invest in great dinnerware and a few stylish platters and you’re already ahead of the game.

Below are a few simple spring recipes I love to prepare when friends drop by. You’re welcome to tuck these up your sleeve for next time you’re sharing a meal with mates.

But first, a few stress-free entertaining hacks.

  • Get a head start by making an effort with your table setting and food presentation. Start with beautiful dinnerware, such as Salisbury & Co, and plate your food with care. A bit of pre-planning goes a long way.
  • Outsource some of the dishes. Grab a beautiful cake, sourdough loaf, fabulous cheeses, and even a pre-made salad to throw into the mix. Then, just throw a roast chook and some potatoes in the oven. 
  • Share the load. Serve up the main course but get your friends to bring nibbles, sweets, or a side dish. 
  • Whole fish on the BBQ is so impressive and only takes minutes to prepare. It is also far cheaper by the kilo than fillets.
  • Serve a grazing platter you can prepare ahead then sit with your guests and enjoy a lazy graze.
  • Slow cook a shoulder of lamb. With minimum effort and a long slow cook, this cut becomes a showstopper. There is also a lot of room for error with cook time, unlike cooking a fillet of beef.

Prosciutto, Burrata and Rocket Salad Recipe

A recipe I return to often for easy entertaining is this gorgeous plated salad designed for grazing. Ready in moments and satisfaction guaranteed, this salad is perfect for spring days. The secret to giving this recipe the wow factor is plating it with thought and using a show-stopping platter such as the long rectangular mango wood platter by Salisbury & Co.

It’s also important that you don’t skimp on the ingredients. The simpler a dish, the more it relies on the quality of each component.

This recipe serves four.

Equipment

Prosciutto Burrata and Rocket Salad spring recipes

Ingredients

Salad

  • 3-4 handfuls of baby rocket
  • 2 large fresh burrata
  • 8-12 slices good quality prosciutto
  • 2 bunches asparagus, ends trimmed
  • 1 tbsp olive oil
  • 4 tbsp hazelnuts, toasted and skinned
  • 1 punnet of blueberries (You can also use ripe nectarines, peaches, figs, cherries, or rockmelon seasonally)
  • Bread sticks

Basil oil

  • 2 handfuls of basil leaves
  • ½ cup extra virgin olive oil
  • ½ clove garlic
  • Salt to taste
  • Juice of ½ lemon (optional)

Instructions

  1. Heat a large pan over medium high heat. Add the oil then asparagus. Toss for a couple of minutes until the asparagus becomes a brighter green colour and has some light browning from the pan. Remove from the pan and set aside.
  2. Scatter half the baby rocket across your platter.
  3. Place a burrata on each side  of the platter.
  4. Fold half of the prosciutto across the platter.
  5. Add half the asparagus, placing it around the prosciutto and burrata.
  6. Sprinkle the remaining rocket and repeat the addition of prosciutto and asparagus.
  7. Make the basil oil by placing the basil leaves, garlic, olive oil, salt, and lemon juice in a food processor or mini chopper. Pulse a few times to blend until smooth.
  8. Finish the salad with blueberries and nuts then drizzle with basil oil, keeping some aside for guests to add as required.
  9. Top with crunchy breadsticks.

BBQ Lamb Cutlet and Watercress Salad Recipe

Spring screams lamb and this gorgeous fresh salad from delicious.com.au would present perfectly on a large round Salisbury & Co Grove serving platter. Keep the kitchen clean while you cook your lamb and zucchini on the BBQ. Throw together the herbs, leaves, and lentils and top with a quick dressing made in the blender. If you want to save a little more time, use well rinsed and drained tinned lentils and dress with store-bought pesto. Add a crusty loaf and a cold glass of rose and you’ve ticked all the boxes.
