Moderate, , Serves 10 Jars

This is an absolute winner of a recipe and is great as a gift at Christmas time. It lasts for ages so put some in storage to use in sandwiches, with BBQs and a side with a cheese platter

  • 4kg Ripe Tomatoes
  • 1.5kg Brown Onions
  • 1 1/3 cups Brown Sugar
  • 4.5 Tbsp Mustard Powder
  • 3 Tbsp Curry Powder
  • 3/4 Tsp Cayenne Pepper
  • 1.7 Litre White Vinegar
  • 1 Tbsp Cornflour
  1. 1 Peel and slice onions
  2. Peel tomatoes – easiest way to do this is to score the end and then put them in boiling water for a minute or 2. Transfer into a bowl of iced water then peel
  3. Combine chopped tomatoes and onions sprinkle with salt and leave overnight
  4. Pour off all liquid in the morning
  5. Place tomatoes and onion in a large pot and cover with vinegar
  6. Add sugar and bring to the boil. Boil for 5 minutes
  7. Combine all spices and stir into the relish mixture
  8. Boil gently for an hour removing scum and stirring frequently
  9. To thicken the relish add cornflour to a little water and mix to a smooth paste. Add a little of the hot liquid from the relish mixture until the consistency is like thin cream. Then add paste to relish mixture;Step 10 Stir relish mixture for about 5 minutes until it thickens;Step 11 Bottle the relish into hot sterilised jars and seal when cold
