How to Make the Smoothest Fondue

This traditional Swiss peasant dish was originally created to use up ends of cheese and bread and evolved to become the height of sophistication in the 70’s. This classic recipe uses a combination of well ripened cheese and high acid white wine. Traditionalists serve white wine, kirsch or herbal tea only for drinks as Swiss lore states that any other drink will cause the melted cheese to coagulate in the stomach!
