Making all our French cuisine dreams come true 🇫🇷 @eatnikfood has made a delicious classic French coq au vin in the #Wolstead Endure cast iron pot. Braised chicken in a rich and comforting red wine gravy - what's not to love? #CookYourHeartOut♥️

COQ AU VIN - Serves 4⁣
⁣
1.2kg chicken, bone in, skin on (thighs, drumsticks etc.)⁣
3 cups pinot noir ⁣
2 tsp salt⁣
1 tsp black pepper⁣
1 bay leaf⁣
1 tbsp dried thyme⁣
100g pancetta lardons⁣
200g onions (brown or pickling, or a combo of both)⁣
200g mushrooms, small, whole⁣
2 medium carrots, diced⁣
3 cloves garlic, minced⁣
1 tbsp (20g) tomato paste⁣
1/4c brandy⁣
2 tbsp (30g) flour ⁣
1c (250mL) chicken stock⁣
1/4c parsley, chopped⁣
⁣
METHOD
1. In a large bowl add chicken, red wine, salt and pepper, bay leaf and thyme. Ensure your chicken is covered. ⁣
2. Cover the bowl with plastic wrap and place in the fridge overnight (12-24hrs is ideal).⁣
3. The next day, remove the chicken from the wine and pat each piece dry with a paper towel. Reserve 2 cups of the wine for your stew.⁣
4. Preheat your oven to 180ºC.⁣
5. In your cast-iron pan, add pancetta lardons and cook over a low to medium heat for 10 minutes to render out the fat. Using a slotted spoon, scoop out and set aside on paper towel.⁣
6. Cook your chicken pieces, skin side down until crispy before flipping and cooking on the other side for 2-3 minutes. Cook chicken in batches so as to not overcrowd the pan. Chicken does not need to be cooked through. Once all pieces are browned, set aside.⁣
7. Turn heat up to medium high. Add onions, mushrooms and carrots to rendered fat. Sauté for 3-5 minutes until softened. ⁣
8. Add garlic and tomato paste and cook off for a further minute.⁣
9. Pour in brandy and allow to cook off for one minute.⁣
10. Sprinkle over flour and stir, cooking off for one minute.⁣
11. Pour in 2 cups (500mL) of the reserved red wine marinade and 1 cup of chicken stock. Stir well, scraping up any brown bits on the bottom of the pan. ⁣
12. Add chicken back in and pancetta lardons. Cover pot with lid and place into the oven for 45 minutes. ⁣
13. Serve coq au vin with mashed potato or egg noodles. Sprinkle stew with parsley. ⁣

Ingredients:⁠
50ml raspberry gin (see recipe)⁠
20ml honey syrup (made with honey and boiling water; see method)⁠
20ml freshly squeezed lemon juice⁠
⁠
Method:⁠
To make the honey syrup, combine three parts honey to one part boiling water and stir to combine completely. Allow to cool slightly.⁠
⁠
Assemble all ingredients in cocktail shaker (or a container with a reliable lid) with one large ice cube or a handful of smaller ones. ⁠
⁠
Move it around lightly to chill the mixture, then vigorously shake for 10 seconds to aerate and dilute it.⁠
⁠
Strain into your favourite chilled cocktail glass. Cheers!

Apple, Rhubarb, Berries & Ginger Crumble by Helen Rocke ♥️⁠

SERVES: 4⁠
PREP TIME: 20 minutes⁠
COOKING TIME: 1 hour⁠

INGREDIENTS⁠
1 bunch (425g) rhubarb, trimmed, cut into 2cm pieces ⁠
3 Granny Smith apples, peeled, cored and thinly sliced⁠
1 cup berries⁠
2 tbsp caster sugar⁠
1 tsp orange rind, finely grated⁠
2 tbsp orange juice⁠
1 cup self-raising flour⁠
2/3 cup brown sugar⁠
80g unsalted butter, chilled, chopped⁠
125g Ginger Nut biscuits, crushed⁠
Thickened cream, to serve⁠
Vanilla ice cream, to serve⁠
⁠
METHODS⁠
Preheat the oven to 180°C. Grease a 1.5L (6 cup capacity) ovenproof dish or cast iron skillet.⁠
Combine rhubarb, apple, berries, caster sugar, orange rind and juice in the prepared dish. Bake, covered, stirring once, for 30 minutes or until the fruit is just tender. Remove from the oven.⁠
Meanwhile, combine flour and brown sugar in a large bowl. Add butter. Using your fingertips, rub butter into flour mixture until mixture resembles coarse breadcrumbs. Add crushed Ginger Nut biscuits and combine. Sprinkle over the rhubarb and apple mixture.⁠
Bake, uncovered, for 25 to 30 minutes or until the crumble is golden brown. Serve with thickened cream and vanilla ice cream.⁠
