Waffles with Mulled Berries and Maple Butter Recipe

Ingredients

For the waffles

300g self raising flour

2 tsp baking powder

2 tsp sugar

2 large free range eggs

1 orange, zested

1 tsp vanilla extract

500ml milk

Melted butter, to brush

Icing sugar, to serve

For the mulled berries

½ cup orange juice

½ cup sugar

2 cinnamon sticks

½ tsp allspice

½ tsp ground ginger

2 cups mixed berries, fresh or frozen

For the maple butter

150g butter

3 tbsp maple syrup

Instructions

For the waffles

1. Combine the flour, baking powder and sugar in a bowl. Steadily beat in the eggs one at a time.

2. Mix in the orange zest and vanilla extract then add in the milk gradually. Whisk for 2 minutes until well combined.

3. Place the batter in a jug and store in the fridge until you’ve finished making the mulled berries and maple butter.

4. Once you’re ready to cook the batter, preheat the waffle machine and brush melted butter directly onto the hot plates.

5. Pour the batter so it fills each square without oozing over the sides.

6. Cook until crisp and slightly brown. Serve with warm mulled berries, maple butter and a sprinkling of icing sugar.

For the mulled berries

1. Add the juice, sugar, cinnamon, allspice and ginger into a saucepan.

2. Simmer for 5 minutes then add berries.

3. Simmer for a further 5 minutes then turn off the heat.

For the maple butter

1. Whisk the butter until light and fluffy.

2. Add the maple syrup and whisk for another minute.

3. Refrigerate until ready to serve.
