The perfect combination of Watermelon and Bacardi is a Kitchen Warehouse favourite. Enhanced by the tang of fresh lime and mint, here’s a drink to spice up Happy Hour.
Equipment:
- Blender
- Mortar and Pestle
- Measuring cups
- Watermelon Slicer
- Spirit Measure
- Large jug
- Cocktail glasses or tumblers
- Wooden spoon for stirring
Ingredients:
- 3 – 4 thick slices of watermelon
- 6 Tbsp fresh lime juice
- ½ cup sugar syrup ✳
- 30 large fresh mint leaves
- 12 oz Bacardi rum
- Ice cubes
Note: Combine 2 parts water to 1 part sugar in saucepan and cook over low heat until sugar dissolved. Boil for one minute.
Instructions:
- Use watermelon slicer to remove fruit from melon and remove seeds
- Puree watermelon in blender
- Mash mint leaves in a mortar and pestle
- Add all ingredients to a large jug and stir vigorously
- Place ice cubes in glasses before serving
