Granola is a great start to the day, with nuts for protein and slow-burning carbs from the oats. Use this as a base and add in your favourite nuts, dried fruit, and citrus flavours—anything you like! If you can find unprocessed honey, it will really shine in this recipe, which serves six. Otherwise, opt for a robust flavoured one such as Redgum. Warning: make this in bulk, as it will disappear fast!

  • 50g brown sugar
  • 75g honey
  • 1 tbsp sunflower oil
  • ½ vanilla pod, seeds scraped
  • 250g rolled oats
  • 35g thread coconut
  • 85g flaked almonds
  • 30g sunflower seeds
  • 30g pumpkin seeds

  1. Preheat the oven to 120C.
  2. Bring honey, sugar, oil, and vanilla to a boil in a saucepan. Remove from the heat.
  3. Combine the remaining ingredients in a bowl and pour over the honey mixture. Toss to coat evenly. Spread over a baking tray and bake for 40 minutes or until golden, tossing every 10 to 15 minutes.
  4. Serve your granola hot or allow to cool and break up into chunks and store in an airtight container.
