Fluffy pancakes are my all time favourite breakfast. They are the perfect base to dress up – top with poached pears, salted caramel, ice cream! Or if you are a simple girl like me, maple syrup and butter is all you need. The tip to great fluffy pancakes? Don’t overwork the batter (if there are lumps, thats fine!) and always use self raising flour.

- 2 eggs
- 2 cups self-raising flour
- 2 cups milk
Method
- Simply mix all the ingredients together in a bowl with a whisk. Don’t over mix as this will toughen the batter.
- Cook on the Scanpan crepe pan over medium heat. After 1 minute bubbles will have formed on the surface, flip the pancake and cook for another 15 seconds.
- Stack them up high and enjoy!
