Equipment

Romesco Sauce

Ingredients

  • 3 roasted peppers (from a jar)
  • ยผ cup of almonds
  • 60ml olive oil (1/4 cup)
  • 1 cloves garlic, roughly chopped
  • 2 tsps sherry (or balsamic vinegar)
  • 1 tsp smoked paprika
  • 1/2 tsp chopped dried oregano
  • freshly ground black pepper to taste
  • 1/4 tsp salt

Instructions

  1. Put the almonds, peppers and garlic in a food processor, blender or stick blender and process until combined .
  2. ย Add sherry (or vinegar), smoked paprika, oregano and salt and pulse 10 times.
  3. Mix in the salt, black pepper and dried rosemary.
  4. Place on pizza base and cook. You can add mushroom, pre-roasted vegetables or any other ingredients you like at this point but I like to keep it simple usually and just throw some fresh rocket on at the end. This sauce stores in the fridge for up to 5 days.

White Bean Sauce

Ingredients

  • 400g cooked white beans (cannellini or butter beans)
  • 30ml lemon juice (about half a lemon)
  • 60ml olive oil (1/4 cup)
  • 2 cloves garlic, roughly chopped
  • 1/2 tsp chopped dried rosemary
  • freshly ground black pepper to taste
  • 1/4 tsp salt

Instructions

  1. Put the beans, lemon juice, olive oil and garlic in a food processor or blender and process until smooth and creamy with no lumps.
  2. Mix in the salt, black pepper and dried rosemary.
  3. Place on pizza base before or after you cook the pizza. This sauce also tastes great as a dip.

Rosemary

Ingredients

  • few sprigs of Rosemary (or Oregano)
  • drizzle of Olive Oil
  • 1/4 tsp salt

Instructions

  1. Scatter rosemary leaves and salt on the pizza base. Drizzle some olive oil over the base too, but not too much as it will get soggy.
  2. Cook the pizza. Drizzle some more olive oil if needed. Eat as is or with a homemade dip.
