Ingredients:

  • 680g boneless chicken breasts, cut into strips
  • 1 1/2 tbsp low-sodium soy sauce
  • 2 1/2 tbsp cooking oil
  • 2 tsp lemon juice
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 medium onion, chopped
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 1/2 tbsp hoisin sauce
  • 1/4 tsp sesame oil
  • 1 medium red capsicum, sliced into strips
  • 1 medium green capsicum, sliced into strips

Directions:

  1. In a bowl, mix together chicken, soy sauce and lemon juice.
  2. Marinate for at least an hour.
  3. Heat oil in a wok over medium-high heat.
  4. Add and saute ginger, garlic and onion.
  5. Add the chicken strips and stir-fry for 3-5 minutes.
  6. Add salt and pepper, hoisin sauce and sesame oil.
  7. Continue to stir-fry.
  8. Lastly, add red and green capsicums and cook for 4-5 minutes.
  9. Remove from heat. Serve over fried rice.
